Castor: this is a map of Paris boulangeries, not pâtisseries. So it’s all about bread.
You have left out Jocteur. The bread is nice, the choice is good, and staff always smiley. Perhaps not the most famous of places, but I really like it and much prefer it to e.g. Gosselin. Address is 14 Ave des Villars, 75007.
Boulangerie Zerzour has been closed for renovations since way before Christmas, unfortunately. By the look of it they won’t be opening very soon. (And I’m sorry to say that we don’t miss them that much.)
But I can really recommend to include Maison Dossemont http://www.boulangeriemaisondossemont.com/ on 110, rue Lecourbe, in the 15e. (maisondossemont@gmail.com, tel. 01 47 34 99 72, Fri–Tue, 6.30–20.00)
Picky husband has chosen their baguette to be the best in our quartier, plus they have a huge choice of bread and pâtisseries, and the girls behind the counter couldn’t be sweeter.
Landemaine in the 11th at Place Voltaire is fantastic for breads, viennoisseries. A special mention to their Brioche Vendeene flavored with orange flower water.
And Ganachaud in the 11th on rue Oberkampf is also excellent. I love the pain aux cereals grilles.
Sorry to report that the Boulangerie Zerzour now is closed for good and that the shop is for rent. Time to take them off the map.
OK, pretty exhaustive, but I’m from Paris and see a few that are still very much worth mentioning. You nailed most of the good ones, but you mention way too many Kayser stores!
- Bechu, avenue Victor Hugo has probably one of the best traditionnal baguette in Paris, and it is very well renowned.
- Bolangerie Secco is rue Jean Nicot (6th or 7th); he’s more of a pastry guy (and his creations are wonderful), but this was the boulangerie de Jean-Luc Poujauran, A MYTHICAL FRENCH BAKER. They still make his bread in the basement, and it’s arguably the best bread in the world. Also a good contender for Julien and Bechu on the baguette. And it’s a wonderful place to see (for a bread lover).
- the bakery at Convention metro was also good as late as a couple years ago, but that’s a more of a local’s and emergency solution… And you may know how often we may need that in Paris!
