The “state of the art” preparation takes place over three consecutive services and results in an “irresistable” contrast between crispy skin and melting duck fat. - A posse of PbM readers joined Dorie Greenspan yesterday at the U.S. Ambassador’s residence to taste Napa Valley wines paired with Dorie’s own gougères and a series of dishes (truffled Brie and foie gras) prepared by Yves Rouquel.
