Le Monde (2019) enjoys the convivial atmosphere afforded by the open kitchen and counter seating at Pavyllon, though it reports the cuisine is uneven, with a roller-coaster of experiences between an “enchanting” John Dory with lovage and strawberry and a “vulgar” spinach soup both too acidic and too fatty.
Alexander Lobrano (2019) notes of Pavyllon that chef Alléno “seems to inherently understand that French haute cuisine is searching for relevance in a new century.” While for Lobrano, “some experiments are better than others,” he praises the “luscious stroganoff of Wagyu beef under a thatch of celeriac matchsticks and potato straws.”
