Le Figaro (2020) applauds the “exemplary” pizzas from 2019’s world pizza champion Giuseppe Cutraro and his “Rolls” of an oven. Emmanuel Rubin recommends pizza that earned “Peppe” his title: yellow Sicilian tomato, San Daniele ham, provolone, buffalo mozzarella, toasted almonds, and fig jam.
GQ (2020) gives a special nod to the dough, which is apparently what makes this pizza stand out: ultra-light and full of massive airholes thanks to “almost obsessive” work from Peppe himself.
