The specialty at Gaya is seafood, but if you’re seeking grand platters of shellfish or sole meunière, look elsewhere. Gaya, run by Pierre Gagnaire, is a throroughly modern affair.
Hearsay
- The €33 million renovation of Le Bristol hotel will include, among other things, relocating the 3* restaurant by Éric Fréchon to a permanent spot overlooking the garden. They also plan to add a fireplace and chef’s table.
- Busy boy: Cyril Lignac has just opened a cooking school in the northern Marais called Cuisine Attitude with small group classes priced at €80-100. [L'Hôtellerie Restauration]

- Jérôme Berger writes that everything has already been said and written about Le Dauphin, except for this: “Dieu que c’est bon, à midi, au Dauphin!” [A Nous Paris] Pudlo also loved on the €27 lunch last Friday.
