- Pudlo observes the anglophones, the groupies, and the three-day beards at Le Chateaubriand and concludes that it’s a place you must go, at least once, to taste “les idées du moment.” To wit: white asparagus with parmesan snow and olive oil and a dessert of orange sorbet with black olive powder and bitter endive. - And speaking of three-day beards, Pierre Jancou seems “never to have left” his new restaurant that opened only yesterday. Bruno visited Vivant for lunch and sampled the formaggio (Castelmagno, Taleggio), a bright salad of Annie Bertin asparagus, a bit of foie gras and a “poulard Racines” with vegetables. With wine (a dry muscat from Pantelleria) and coffee signed by Giani Frasi, Bruno says to count 60-75€ per person. [Food Intelligence]
Some of our favorite Paris tables are impossible to book at the last minute. The spaces are tiny, the chefs are brilliant, and everybody wants to go. If you’re traveling without a phone or simply haven’t planned ahead, you’re probably not getting in.

Here’s the situation: You can only reserve for the first seating at Le Chateaubriand. After that, you’ll have to wait in line with everyone else for a stab at Iñaki Aizpitarte’s unique (that’s putting it mildly), 50€ menu, a parade of forgotten vegetables, fish, and meat (some raw, some cooked) that landed the restaurant on San Pellegrino’s 50 Best list last year.
