Aaron Ayscough visits Le Severo, Chrisos delivers state-of-the-burger address, and Pudlo goes for pastrami in Passy.
Where can you score a great steak frites in Paris? We asked our contributing advisors – a group of Paris-based food writers – to name five favorite places for a steak frites fix. The overall favorite: Le Severo.
- Omnivore is throwing one last party before summer: 100% Friends will be hosted by a “brigade” that includes hot baker Gontran Cherrier, Bruno Verjus, Giovanni Passerini,
Sébastien Demorand, and Gilles Choukroun. [Omnivore]
- On June 25, a group of pastry devotees, led by their patron Saint Adam-of-the-holy-glycemic-index shall descend upon Jacques Genin’s shop en masse, buy stuff, then go eat it in a nearby park and wait for the rapture. Or something. [Paris Pâtisseries]
N’Importe Quoi
- Jean-François Piège says in an interview with Luc Dubanchet that he doesn’t make blogger food like fellow chefs Inaki Aizpitarte, Petter Nilsson and Sven Chartier. To this we say Woof. [Omnivore]
Happy Plates
- Talbott says that Le Severo‘s côte de boeuf is “not for the faint of heart or wallet, running one 80 E for two - but it is the gold standard and the method of making the frites should be required reading for the chefs at the other 39,999 restos in the ville. [John Talbott's Paris]
Trends
- The vermin are back. Paris’ préfecture de Police has reported a significant increase in the number of complaints about rats, which are estimated by exterminators to number six million in the metropolitan area. [eVous]
Happy Plates
- Emmanuel Rubin gives
(out of 4) to Le Pantruche and praises the same dish – coddled egg on a bed of baby leeks – that Alec Lobrano loved last week [Le Figaro]. Pudlo offers a photo of the egg in question and calls Le Pantruche “cheap, fun, fresh, and well done.” [Gilles Pudlowski]
Meat lovers, meet Le Severo, where former butcher William Bernet offers a legendary tartare, honest-to-goodness aged steaks (surprisingly rare in Paris), fat frites, and a great wine list.
