Chef Esu Lee — the talent behind Jip in the 11th — has opened a more personal and ambitious project on the rue du Dragon in Saint-Germain. At Orson, a custom-built wood-fire grill anchors the room, and the (expensive) menu is enticing. The format is à la carte, replacing the tasting menu that earned early acclaim, and dishes arrive as they’re ready — a format that rewards sharing. The snacks are confident and punchy, the wine list is an intelligent, all-French natural selection, and the non-alcoholic drink program is genuinely thoughtful. The rouget, grilled over wood fire and served with two varieties of bitter radicchio, is exceptional. Other dishes, including an underseasoned chicken that failed to deliver on its own menu description, are less convincing. At these prices — mains from 38€ to 70€ — the inconsistency is hard to overlook.
