The team behind Fermentation Générale — the 11th’s miso, bread and kombucha specialists — has opened a pizzeria called Acid Lactic a few doors down, and their obsession with fermentation carries onto the pizza. The dough is 100% natural levain made with French heritage wheats, hand-kneaded into something chewy and almost bread-like, a world away from the Neapolitan version on every corner. The short menu runs to seven pizzas (15–20€) plus a dessert of the day; we liked the spicy N’duja and the green, spring-y Peko Peko, piled with asparagus, smoked mozzarella and nettle pesto. To drink: all-natural wine from the mother shop, plus local kombucha and kéfir for anyone off alcohol. One warning — the room at Acid Lactic is tiny, just counter stools and a few two-tops, and one server can’t keep up with a crowd. Come with one other person, not four.
