Cypsèle is the kind of restaurant that makes you reconsider what a tasting menu can be. Polish-born chef Marcin Król — formerly of Noma, Le Chateaubriand, and Maison — opened this intimate room on the Île Saint-Louis with sommelier Quentin Loisel, late of Le Jules Verne. Together they’ve built something quiet and confident: a daily-changing menu that draws on wood smoke, foraged flavors, and surprising technique without performing any of it.

The 17th-century boiserie and mercury mirrors have been restored rather than erased, and Loisel’s wine list shows the same editorial restraint — a small number of producers, chosen with care. Lunch is 85€ for the full menu; dinner is 145€. Book online or by phone. Reservations are essential — this one is already on people’s radar.
