FIEF is a sleek and modern restaurant in the 11th with a mission to use local ingredients. The name FIEF stands for Fait Ici En France (made here in France) and the restaurant’s goal is to import nothing from outside of France. Their mission is executed with phenomenal expertise by chef Victor Mercier (a Top Chef finalist in 2018) and his team. They’ve earned a Michelin star for their efforts, and are offering both a vegan tasting menu (85€) and a “conscious omnivore” tasting menu (95€). The affordable wine pairings (50€) are worth getting. The “Territories” menu, served only at the open kitchen counter, includes every dish for 125€. FIEF is hands-down the best tasting menu for vegans or vegetarians in Paris, and it’s a winner for omnivores, too.
