Chef Hitoshi Minatani and dining room manager Victor Baraton-Dorat bring exceptional bistronomic cooking to the Gare de l’Est neighborhood at Fugue. The cooking here is both technically precise and deeply satisfying, with dishes like sea bass en croûte and pork-foie gras-pigeon terrine demonstrating serious French technique. The 75€ five-course tasting menu represents outstanding value for this level of execution, while lunch menus starting at 25€ make the restaurant accessible for a wider range of budgets. The wine list shows real expertise, balancing grower Champagnes and natural wines with classic producers, and offering strong value in the 50-110€ range. Counter seating facing the kitchen allows solo diners to watch the chef work, while the pared-down stone-walled space feels special without being stuffy.
