Jip is the restaurant that put chef Esu Lee on the Paris map, and it remains a useful address in the 11th even now that Lee has moved on to Orson. The format is brisk: a three-course set menu at 35€, served at fixed seatings of 6:30, 8pm, and 9:30pm. You are seated, fed, and sent on your way — which is not a criticism. The 11th is full of excellent wine bars and cocktail spots, and Jip works perfectly as a first stop before a longer evening. The cooking draws on Korean ingredients and technique — fennel-topped shrimp toast, dumplings with duxelles and béarnaise, tteokbokki noodles with parmesan custard — and while it’s more playful than profound, at this price it delivers.
