A decade in, Le Bon Saint-Pourçain has matured into one of Saint-Germain’s most assured bistros. Chef Mathieu Techer (ex-Senderens, Le Sergent Recruteur) helms a tiny open kitchen at the back of a lived-in corner room with white tablecloths, vintage Gien china, and a clientele of regulars. The chalkboard menu changes constantly with the market. Three courses run to about €80 per person before wine — fine-dining-adjacent prices for cooking that uses recognizably French technique and impeccable seasonal produce, made for an audience of locals rather than visitors. The compact terrace seats twelve on a quiet cobbled lane between Saint-Sulpice and the Luxembourg Gardens. Service is outstanding — diners and non-French-speaking guests are looked after with real attentiveness.
