After the closure of Hémicycle, one of our former 50 Favorites, chef Flavio Lucarini and pastry chef Aurora Storari have taken over the kitchen at Substance — a Michelin-starred address in the 16th arrondissement that now belongs entirely to their Franco-Italian vision. Lucarini’s cooking is precise and instinctive: expect pasta dishes that reference Rome as much as Paris, main courses built around bitter greens and citrus rather than cream, and a commitment to seasonal ingredients that runs through every plate. Storari, a Michelin Passion Dessert winner, closes the meal with desserts that are among the most inventive in the city. Lunch menus start at €68, making this one of the more accessible entry points for serious cooking on this side of the city. Open Monday through Friday, with a dedicated vegetarian tasting menu.
