Virtus sits half a block from the Marché d’Aligre on a street of beer bars and local cafés — not the address you’d expect for one of Paris’s most technically ambitious restaurants. Chef Frédéric Lorimier spent nearly a decade at La Vague d’Or in Saint-Tropez before opening here with partner Camille Gouyer in 2021. Within four years they had two Michelin stars and, at the same ceremony, a Michelin Service Prize for Gouyer. The tasting menus move through the sea before landing on land — seven courses built around sauces of extraordinary depth and precision, produce from the market steps away, and a wine pairing assembled by sommelier Baptiste Nicod that reflects the same confidence as the kitchen. The room, designed by collector Marcelo Joulia, is furnished entirely with vintage and collectible design objects. A destination for special occasions.
