Datil is chef Manon Fleury’s first solo restaurant in the northern Marais, run in partnership with head chef Laurène Barjhoux (ex-Arpège). The cooking is vegetable-forward with seafood emphasis, treating meat as condiment rather than centerpiece—a philosophy rooted in sustainability and seasonality.

The five-course tasting menu (65€ lunch, 120€ dinner) demonstrates serious technical skill wrapped in calm, collaborative service. Courses like corn infusion with beignet, charred turnips with sea scallops, and caramelized leeks in shellfish broth showcase creative vegetable work. Wine pairings lean natural, including unexpected choices like quince-walnut beer.

The atmosphere is notably composed—no screaming chefs, no frantic service. The team operates horizontally without traditional kitchen hierarchy, creating an experience that feels both professional and genuinely pleasant.
